Spinach, Basil and Cashew Dip

This delicious dip is easy to make and oh so good for you!

Spinach, basil and cashew dip


100g baby spinach
1/2 cup fresh basil leaves
1/2 cup roasted cashews
1/4 cup olive oil
1 tablespoon lemon juice
1/2 cup finely grated parmesan



  1. Place spinach, basil and cashews in a food processor. Process, scraping down sides occasionally, until almost smooth.
  2. With motor operating, add oil, lemon juice and 2 tablespoons cold water in a slow, steady stream. Process until well combined.
  3. Transfer to a serving bowl. Stir in parmesan. Season with salt and pepper. Serve.



Don’t like cashews? Why not replace them with pistachios, pine nuts, or any other nut you prefer! All nuts are good for you, so go ahead, mix it up a little!
